Banana Chocolate Chip Muffins
1/4 cup sugar
1/2 cup butter, melted
2 eggs
3 mashed bananas
1/2 cup buttermilk
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chocolate chips
Preheat oven to 350. Mix together the first 6 ingredients in a medium-sized bowl. Then, add the flour, baking soda, salt, and chocolate chips, and stir until just moistened. Batter will be slightly lumpy. Grease a muffin tin (or use cupcake liners), and fill each container until 2/3 full. Bake for 20-25 minutes or until barely browned on top. Makes about 24 muffins.
If you don't have buttermilk, an easy substitute is 1/2 cup milk + 1 teaspoon vinegar. And whatever you do, don't be stingy on the chocolate chips. Enjoy!
I was going to make banana bread tomorrow, but I think I'll try these instead :)
ReplyDeleteDo it. Although I think this recipe would be fantastic as a bread loaf, and it would probably be pretty easy to make the switch in your recipe.

DeleteNo joke. I made and ate 8 dozen snickerdoodles in the month after giving birth. I have never been so hungry in all my life and I needed cookies! These look delicious! I was just thinking I need to bake some banana bread ( with chocolate chips, of course)
