Easy Banana Chocolate Chip Muffins


Around here, muffins are our favorite treat. Probably because you can get away with eating them for breakfast. And lunch. And dinner. And dessert. It's hard to contain ourselves, especially when this recipe is so yummy, and so easy to whip up (today I made them while wearing a sleepy baby). Our diet starts tomorrow?


Banana Chocolate Chip Muffins

1/4 cup sugar
1/2 cup butter, melted
2 eggs
3 mashed bananas
1/2 cup buttermilk
1 teaspoon vanilla
2  1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chocolate chips

Preheat oven to 350. Mix together the first 6 ingredients in a medium-sized bowl. Then, add the flour, baking soda, salt, and chocolate chips, and stir until just moistened. Batter will be slightly lumpy. Grease a muffin tin (or use cupcake liners), and fill each container until 2/3 full. Bake for 20-25 minutes or until barely browned on top. Makes about 24 muffins.

If you don't have buttermilk, an easy substitute is 1/2 cup milk + 1 teaspoon vinegar. And whatever you do, don't be stingy on the chocolate chips. Enjoy!

    1. Do it. Although I think this recipe would be fantastic as a bread loaf, and it would probably be pretty easy to make the switch in your recipe.

  3. No joke. I made and ate 8 dozen snickerdoodles in the month after giving birth. I have never been so hungry in all my life and I needed cookies! These look delicious! I was just thinking I need to bake some banana bread ( with chocolate chips, of course)
